How to cook Beef Luwombo


Ingredients

    Ingredients for 3 medium-size mpombo (plural of luwombo)

  1. 500 g beef
  2. young banana leaves
  3. banana fibers
  4. 3 tomatoes
  5. 1 onion
  6. 1 garlic clove
  7. 2 tea spoons curry powder
  8. 100 g salt

Method

  1. Roast the beef until it is very dry and cut it into cubes
  2. Prepare the banana leaves by cutting off the petiole and the entire midrib, then scorch the now clean banana leaf laminas on an open fire for a few seconds and set them aside
  3. Chop the onion, tomatoes, and garlic into very small pieces.
  4. Set the scorched banana leaves in a bowl one after the other and set in the meat cubes followed by the tomatoes, onions, garlic, and a reasonable amount of curry powder
  5. Wrap up and tie closed with a banana fiber.
  6. Prepare a saucepan: Add water and set in the petiole and midribs previously cut from the banana leaves
  7. Arrange them in such a way that they support the mpombo, avoiding contact with the water.
  8. Cover them with another fresh banana leaf and set the mpombo on top.
  9. Cover everything with three or four fresh banana leaves and put on the fire to start steaming.
  10. Cook for about an hour and serve with steamed green bananas, sweet potatoes, cassava, yam or any food of your choice.
