Ingredients
- 500 g beef
- young banana leaves
- banana fibers
- 3 tomatoes
- 1 onion
- 1 garlic clove
- 2 tea spoons curry powder
- 100 g salt
Ingredients for 3 medium-size mpombo (plural of luwombo)
Method
- Roast the beef until it is very dry and cut it into cubes
- Prepare the banana leaves by cutting off the petiole and the entire midrib, then scorch the now clean banana leaf laminas on an open fire for a few seconds and set them aside
- Chop the onion, tomatoes, and garlic into very small pieces.
- Set the scorched banana leaves in a bowl one after the other and set in the meat cubes followed by the tomatoes, onions, garlic, and a reasonable amount of curry powder
- Wrap up and tie closed with a banana fiber.
- Prepare a saucepan: Add water and set in the petiole and midribs previously cut from the banana leaves
- Arrange them in such a way that they support the mpombo, avoiding contact with the water.
- Cover them with another fresh banana leaf and set the mpombo on top.
- Cover everything with three or four fresh banana leaves and put on the fire to start steaming.
- Cook for about an hour and serve with steamed green bananas, sweet potatoes, cassava, yam or any food of your choice.
