How to prepare Matured Sorghum Porridge

    Ingredients for 4 people

  1. clean filtered water
  2. 500 g sorghum flour

Method

  1. In a clean kettle, bring 2 litres of water to boil. In a bowl, mix the sorghum flour into cold water and stir until there are no lumps left (it is normal for some particles to remain).
  2. Put a saucepan on the fire and add the hot water from the kettle
  3. Pour the mixture from the bowl into the saucepan and continue stirring until the color of the porridge changes to black and a foamy liquid starts rising to the top.
  4. Pour the hot porridge into a medium-sized pot and dilute it with cold clean water.
  5. Cover the porridge and let sit for 12 hours. After this time the porridge is ready for consumption
  6. There is no need to add sugar. Serve at any time, especially after a meal
